Our story begins close to where Cantillon Brewery has been making history since 1900, crafting lambic beers through the unique art of spontaneous fermentation. Inspired by their artisanal process, we saw an opportunity to transform what’s left behind into something entirely new. Partnering with Cantillon, we repurposed surplus fruit from their Geuze and Lambic brews, capturing the bold flavors that make these beers so iconic—and giving them a second life as vibrant jams.
